Mexican Black Bean and Cheese Quesadillas in gobbleright wraps

Ingredients Used

gobbleright’s Chickpea Wraps! 

1 cup black beans

2 tbsp mexican seasoning

1 tsp red chili powder

½ chopped onion 

Salt to taste

1 tbsp minced garlic

½ cup grated cheddar cheese

Method

On a wok, add some oil and sauté the garlic and onion.

Then add the seasonings, the black beans and cook for 3-4 minutes and set aside.

Heat a skillet over medium-high heat and cook the wrap for 5 seconds on each side.

Lay the beans and cheese and fold the wrap in half.

Cook the quesadillas in a skillet over medium heat on each side until brown and crispy and the cheesy filling has melted.

Slice into triangles then serve.

Serve with salsa and enjoy!
